We’re hosting a hands-on macaron class with Crystal and Evan from Moraga's own PaperBox Pastry.
Who You’ll Be Learning From
Crystal and Evan are a local family with young kids who have been part of the Lamorinda community for years.
Evan worked as a pastry chef at The French Laundry in Napa Valley. Together, they’ve been a mainstay at the Moraga Farmers Market for the last decade through PaperBox Pastry.
They know how to make beautiful, delicious pastries, and now they're going to teach you.
What We’ll Make (and Learn)
Macarons are famously finicky. This class is designed to make them understandable.
Over four weeks, you’ll learn:
• What actually matters (and what doesn’t)
• How to mix, fold, and pipe consistently
• How to read batter by feel, not guesswork
• How oven temperature really affects results
• How to troubleshoot cracks, hollows, and texture issues
• How to assemble, fill, and store macarons properly
This is not a one-off demo—you’ll build skill week by week.
Class Structure
• Four 2-hour classes
• One class per week
• March (exact dates confirmed with the group)
• Small group, hands-on, plenty of time for questions
You’ll leave each session understanding why things worked—or didn’t.

We are a husband and wife duo working together to bring the Lamorinda area seasonal, high quality pastries and sweets exclusively at the Moraga Farmers' Market.
After attending the French Pastry School in Chicago, we worked in notable Napa Valley establishments (The French Laundry) before returning to the East Bay to launch our own pastry business. Our menu features some of our favorites such as French macarons, cream puffs, and twice baked croissants. Flavors and items change with the seasons, so please visit us to see what's new.
